A smokey protein packed take on your humble potato fritter to support those in their Luteal Phase.
Ingredients (Makes 5 fritters):
- 1 large potato
- 1 Tablespoon chopped onion
- 1 teaspoon smoked paprika
- 2 teaspoons chopped thyme + oregano
- 1 Tablespoon of chopped parsley
- 2 Tablespoons Seed Cycle Blend LUT
- 1 Tablespoon flour (change out with sorghum flour for GF)
- 1 egg (beaten)
- 1 serving Mitchells Bone Broth Unflavoured Protein
- Salt and pepper to season
- Served with sour cream or aioli
Directions:
- Grate potato into a bowl of warm water
- Rinse the grated potatoes and drain into a cloth - squeezing any excess liquid out
- Place dry grated potato into a new bowl
- Add all dry ingredients to the bowl - smoked paprika, herbs, Seed Cycle Blend LUT blend, flour and protein powder.
- Coat the grated potato well
- Add in beaten egg and combine
- Shallow fry tablespoon portions of the mixture in olive oil
- Cook both sides for 2 minutes each or until cooked through and golden
- Serve hot with sour cream or lemon garlic aioli (something tangy)
