Seed Cycling Potato Protein Fritters

A smokey protein packed take on your humble potato fritter to support those in their Luteal Phase.

Ingredients (Makes 5 fritters):
  • 1 large potato
  • 1 Tablespoon chopped onion
  • 1 teaspoon smoked paprika
  • 2 teaspoons chopped thyme + oregano
  • 1 Tablespoon of chopped parsley
  • 2 Tablespoons Seed Cycle Blend LUT
  • 1 Tablespoon flour (change out with sorghum flour for GF)
  • 1 egg (beaten)
  • 1 serving Mitchells Bone Broth Unflavoured Protein
  • Salt and pepper to season
  • Served with sour cream or aioli
Directions:
  • Grate potato into a bowl of warm water
  • Rinse the grated potatoes and drain into a cloth - squeezing any excess liquid out
  • Place dry grated potato into a new bowl
  • Add all dry ingredients to the bowl - smoked paprika, herbs, Seed Cycle Blend LUT blend, flour and protein powder.
  • Coat the grated potato well
  • Add in beaten egg and combine
  • Shallow fry tablespoon portions of the mixture in olive oil
  • Cook both sides for 2 minutes each or until cooked through and golden
  • Serve hot with sour cream or lemon garlic aioli (something tangy)
